Default Eggs Cooked In Pepper Rings

These are so pretty and colorful. The green pepper egg looks a bit
like a shamrock, so it could make a fun St. Patrick's Day brunch item.

An amusing idea! I'd try it for lunch but I used my left-over green
pepper for a pizza last night.
