I found the exchange that I had with Aquaculture NZ about
the safety of frozen mussels whose shells do not open: .............................. Sent: 21 April 2007 9:39 AM To: Nicola Symonds Subject: frozen mussels that do not open This may be a silly question... I have had a few of your mussels not open when cooked properly. Is this a problem (as it is with live mussels) or can they all be eaten? Are there any guidelines for this concern? The response: Hi ..... If mussels do not open when heated then you should not eat them. They are whole mussels par-cooked and flash frozen, then vacuum packed. They should all open as stated. Some of them don't open. Discussion is as to whether they are good anyhow.
