I wish to heck they'd put the milder, green pepper sauce in the big 12
oz. bottle. We go thru that 5 ouncer in about 2 weeks.

Do you have any quantity or packaging rants?

It looks like a gallon jug of "TABASCO brand Green Jalapeno Pepper
Sauce" is available from Amazon for $38.95 That's a whole lot of
pepper sauce!

Becca and I stopped at the Tabasco factory on Avery Island last year.
They sell one gallon bottles of all their sauces. That $39 price tag at
Amazon is cheaper than they were selling it for at the factory store ($42).

Go to a foodservice place and buy the big size (whatever that might be)?

That's not the actual Jalapeno sauce. Tabasco made that for about a
year and a half, it was spectacularly good, everybody liked it and
then they inexplicably stopped making it and replaced it with that
green pepper goop, which is not half as good as the other stuff.

That's the sort of thing I do. Buy the big bottle to avoid the
annoyance of running out. Just pour what you want into a smaller
container.

So THAT is what happened between my first and second bottle of green
Tobasco. The second one was not good enough to keep its place in the
fridge so it got tossed. Thanks for the education! I wag my finger at
myself over reading more labels.

Heck, I'm holding out until it's available in 55 gallon drums for home use.

Interesting. Not that I care, cuz I don't like the Jalapeno "goop",
pre or post, but interesting.

You can find the larger sizes in restaurant supply stores. You might
check there.

We did that tour several years ago. It was interesting. I bought a pair
of earrings with tiny chili peppers in the gift shop.

During the tour I asked a guide how many people worked there. He replied:

"Only about half of them."

Laugh! I'd say that's about standard for most work places.

I love cooking with wine.
Sometimes I even put it in the food.

Well, the stuff they're making now is not terrible I guess, but it
can't hold a candle to the original stuff either.

Yes, local store starting to put Datu Puti brand soy in a double pack
with the vinegar. I don't use that much vinegar so starting to use it
to kill the weeds along the driveway.

I know what you mean. I hated the Commercial green sauces and the starchy
body of them . I make hot sauces as a hobby (mostly red)
about 5 years ago I was encouraged into making a batch of green hot
sauce. Because I was completely out of red peppers, I reluctantly agreed.
My standard green sauce is Roasted Fresh Jalapeno,Tomatillos,
water, vinegar, Caramelized Onions ,Lime juice usually cilantro is added
garlic and spices. No artificial ingredients are used and I like to
minimize the vinegar. I'm happy with my recipes and probably make 10 or
12 dozen bottles of Green a year. Most people like it , Some people
still say they dont like green sauce. You cant please everyone
