Default REC: Baileys eggnog




Serves: 12
Contains: 0.268 standard drinks per serve
Preparation time: 30 minutes (plus chill time)
Skill level: Medium
Ingredients

* 240ml Baileys Original Irish Cream
* 6 eggs
* 112g caster sugar

* 120ml milk
* 720ml double cream
* Nutmeg powder to garnish

You’ll also need

* Large bowl
* Medium bowl
* Electric blender

* Or fork & rotary whisk
* Wooden spoon
* Metal spoon

(Pressed for time? Buy ready-made eggnog from your local supermarket
or bottle shop)

How to make it

1. Beat the eggs in the large bowl until they are thick and creamy. You
can either use the electric blender, starting at a slow speed and then
increasing, or the fork.
2. Gradually blend in the Baileys, milk and sugar with the wooden
spoon.
3. In the medium bowl, whip the double cream until it forms soft peaks
- use either the electric blender again (with clean blades) or a rotary
whisk.
4. Use the metal spoon to stir the double cream into the egg mixture.
5. Chill until ready to serve.
6. Stir again just before serving and add a light dusting of nutmeg to
each glass.
