Nancy Young Posted a loverly Spicy Tortillia Soup, some time ago. I really
like this soup but for some reason haven't made it very often. Today I'll make up a potfull that should keep mee in soup for lunch most of next week. That just leaves making a sandwich or whatever else I want for lunch as a side to the soup. Anyone got a good black bean salad recipe? @@@@@ Now You're Cooking! Export Format Nancy's Chicken Tortilla Soup soups 1 medium onion chopped 2 stalks celery chopped 1 carrot; chopped 2-3 garlic cloves minced 2 tbsp vegetable oil 1 4 oz can green chiles 1 15oz can italian herbed tomatoes chopped; with juice 4 cups chicken stock; 4 -6 cups 1 tsp lemon pepper use a strong brand 2 tsp worchester sauce 1 tsp chili powder 1 tsp ground cumin powder 1/2 tsp hot sauce (to taste) 1/2 cup water 4 tbsp flour 1 lb chicken parts skinned and de-boned; i use thighs 1/3 cup sour cream; see note In a heavy large dutch oven over medium heat soften the onion carrot and celery in the oil. Add the minced garlic and cook about one more minute. Add the green chiles and the chopped tomatoes, then add the chicken stock and the seasoning. Simmer for about 20 minutes. In a small bowl stir together the flour and water then add to soup. Simmer 5 minutes more. Add the chopped chicken meat. Simmer about 5 minutes more. stir in the sour cream and serve. Best served with corn tortilla chips . Note if you are going to freeze parts of this don't add the sour cream till ready to serve. Here is my recipe for a corn and black bean salad:
Corn and Black Bean Salad Southwestern Style 2 cans black beans, drained and rinsed 1 can (1 pound size) corn, drained and rinsed Red and green bell pepper diced small(use as much as you like) 1 small red onion, small dice 1-2 stalks of celery, also diced small 2-3 green onions, diced for garnish Cilantro, chopped for garnish Mix all and set aside. Make dressing: 3/4 cup vegetable oil 1 tsp. salt 1 cup cider vinegar 1 1/2 TBS. water 1 tsp. freshly ground black pepper 1 cup granulated sugar Cumin to taste or can be omitted Mix all of the dressing ingredients in a mixer bowl and mix on low until the sugar has dissolved. Pour over the bean mixture. Refrigerate over night-next day drain and discard the dressing and return the bean mixture to a serving bowl-garnish with the chopped green onions and cilantro. Jan |

Black Bean Sesame Salad 3 Tb sesame oil 5 tsp red wine vinegar 1 can black beans, drained 1-1 1/2 cup cherry tomatoes 1 pepper 1 cup fresh cilantro 1 cup corn salt & pepper optional: jalepeno or cucumber Just chop whatever needs chopping and mix together.
