Here is my recipe for a corn and black bean salad:

Corn and Black Bean Salad Southwestern Style

2 cans black beans, drained and rinsed
1 can (1 pound size) corn, drained and rinsed
Red and green bell pepper diced small(use as much as you like)
1 small red onion, small dice
1-2 stalks of celery, also diced small
2-3 green onions, diced for garnish
Cilantro, chopped for garnish

Mix all and set aside.
Make dressing:

3/4 cup vegetable oil
1 tsp. salt
1 cup cider vinegar
1 1/2 TBS. water
1 tsp. freshly ground black pepper
1 cup granulated sugar
Cumin to taste or can be omitted

Mix all of the dressing ingredients in a mixer bowl and mix on low until the
sugar has dissolved. Pour over the bean mixture. Refrigerate over night-next
day drain and discard the dressing and return the bean mixture to a serving
bowl-garnish with the chopped green onions and cilantro. Jan
