CABBAGE APPLE SALAD
4 cups thinly sliced green cabbage (or a little of the purple mixed in
is nice, too)
1 cup coarsely shredded carrots
3/4 cup coarsely chopped walnuts
1/2 cup mayonaise (NOT Miracle Whip)
1/2 cup buttermilk
1/2 cup golden or dark raisins
1/4 cup minced red onion
2 Tbsp. granulated white sugar
1 Tbsp. lemon juice
1/2 tsp. sea salt
1/4 tsp. fine-grind black pepper
2 to 3 Gala, Golden, or Red Delicious apples, quartered, cored and cut
into thin slices (even Granny Smith can appeal)

Spread walnuts on a cookie sheet to bake at 350=B0 for about 8 minutes,
stirring twice, just to slightly bring, or "toast out" their best
flavor. Mix all ingredients, but for the apples, in a rather large
bowl. When well mixed, gently fold in the apples, taking care not to
break them much.
This salad is best after refrigeration for an hour or two, and keeps
well enough refrigerated to last up to three days, though ther cabbage
will lose some crispness. Served along with meals as a mere side dish,
this recipe may work well for eight to a dozen people.

NOTE: If that nasty, some-prefer-it Miracle Whip must be used,
well-stir 1/2 tsp. of vanilla extract into the MW first, in order to cut
the vinegar-like flavor that awful stuff has.

(Actually, my picky-best potato salad calls for using MW+Vanilla instead
of my beloved Best Foods mayo.)
