Not interchangeable. Flour tortillas for burritos and quesadillas;
corn for enchiladas, tacos, chilaquiles and possibly most other uses
(e.g., tortilla soup, chips, etc.)

When I have the option. I prefer flour torts to corn.

When something is to be baked in a sauce -- enchiladas come to mind. Or
chilaquiles. When the tort needs to be fried crisp before its ultimate
use. When the recipe calls for corn torts and I don't think subbing
flour ones would be right.

I don't know what a serious Mexican cook would have to say about that.
And I don't know if my preferences are "correct" but that's my answer to
your question. :-)

They are interchangeable in my personal world.
It depends entirely on my mood.

Wheat and I don't get along very well, so it's mostly corn. ;-)

I'm planning tho' on playing around more with rice flour when I get to
the asian market and purchase more.

In the past I have used both, but now I only use corn tortillas. I use
them for everything; enchiladas, tacos, quesadillas, chilaquiles, chalupas.

Gluten and I no longer get along.
Rice and the corn tortilla are basic staples in my old age.

My triglycerides have dropped from 400 to 175 in six months.
Gas and bloat are gone, Just by saying goodbye to wheat based foods.

The corn tortilla makes an excellent substitution for the old standby -
the sandwich, without sacrificing taste and flavor. Corn tortillas does
taste better fried

Many recipes spec flour tortillas for burritos.

Funny that. I've noted thru regular testing that rice and corn do not
raise my triglycerides. My last one was 56 and the previous one, 72.

Last time I ate any wheat, 5 days later they were still over 300.

That is the main reason I'm interested in trying to make some kind of
rice bread.

I should clarify by wheat based foods - no donuts, cookies, cakes,
pastries, breads. Sugar use is also way down. This may have also
contributed the lower triglycerides as well. I have tried the
alternatives breads, I find they are just blah! I have increased fruit
dishes in my diet when I something sweet. For the record, I am not a
celiac or have wheat allergies. I just simply feel better without it.

I tend to stay away from baked breads. My stand mixer has not gotten
much use in the last few months. It is not hard to transform traditional
cooking recipes to gluten free ones. The only alternative bread I tend
to make is gluten free pizza doe - still no where near as good as wheat.

I found one thing that taste so much better than the wheat are the corn
based pastas. For bread - the standard corn tortilla is for me. Next
year I will grow my own heirloom corn for grinding and making my own
homemade tortillas.

I've gone the same direction you have Dan. :-) I've gotten used to life
without sugar, and I've gotten to where I don't miss it.

And corn pasta is indeed very good!

Also fried and deep fried no mean not breaded. The rare exception
is when I'm positive the breading is rice based (tempura) or only
corn meal (fried green tomatos). When I have fried chicken it's not
breaded.

Wait 5-10 years. I remember thinking that pasta made from quinoa
was blah. Now I haven't had toxic wheat noodles in so long I would
rather have quinoa pasta. But no matter how long I continue to think
rice bread is flavorless so I have rare other grain breads. Millet
bread is sweet to me, no idea why.

data, or on a guess?

I still sometimes mistakenly order enchiladas forgetting that many
restaurants now make them with flour tortillas. It's just
not the same.

Medical - blood test and colon biopsy - negative. Doc thinks wheat
sensitive - leaky gut. However many things went away - skin rashes,
migraines, numb feet, gas and bloating. Still on thyroid medication
though. I am 52, I had these problems for decades. I tracked my diet for
a several months knowing I had good days and bad. I found the culprit
food item. not the doc.

I use corn tortillas for "cooking" because they don't get soggy and
fall apart. Of course you need huge flour tortillas for burritos.
Flour is interchangeable with corn for making quesadillas, tostada's
and plain old heat & eat.

I don't think I've ever considered flour tortillas (or even had the
choice) for tacos. Not sure how I'd take it... as an abomination or a

I used to coordinate potlucks at work, back when I had a job. I was
pretty loose. I made sure we had certain things (utensils and stuff to
put the food on/in), and some variety, but nothing rigid. So this one
lady wanted to bring enchiladas. Fine. She made a big deal out of it,
these were the real thing, just like her momma made, and her momma was
from Mexico. Ok, fine. I like fake enchiladas, too, whatever that
might mean. So, they arrived. They were flour tortillas, with a white
sauce. I don't remember what all they had in them, besides chicken.
They were very good, and I had two servings, but it wasn't what I was
expecting.

Interesting. They should not taste rancid, of course. They
do not have much shelf life however. When I buy them I
look for a stack of tortillas that is still warm and
steamy having recently been delivered from the tortilleria.
What I don't use right away I sometimes freeze, or make
chips from.

In the 4 years I lived in Mexico City with my stepfather & family (Mexican
born of Italian decent) I was BLESSED never to have any enchiladas made with
flour tortillas. Granted it was a long time ago. I think your lady friend
must have come from a very strange part of Mexico.... Like maybe Dakota,

I managed to track down that wheat was poison to me when I was 30. I
had a lot of chronic digestive problems that I'd had since I was about
12. I was blessed with a good family doc that suggested I keep a diet
log.

He said to write down everything I ate and write down how I felt that
day.

Wheat was the worst, sugar was secondary. My chronic zit problem has
completely resolved now that I've also given up any foods high in sugar,
including <sob> fresh fruit. :-( A lot of sugar in the diet is hell for
skin problems.

Corn tortillas, shrimp and cheese, cooked in a nice hot buttered cast
iron skillet........ ;-d

I love quesadillas! Not had one now for well over a year. <sigh>

DeBohls makes a whole line of corn and rice pastas, including corn
lasagna noodles which are excellent.

You can order them on line, but I can purchase what I want/need from Sun
Harvest in Austin. You may be able to get your local health food store
to order it for you.

I agree, too much sugar can be a problem for me as well, I can get those
sugar buzzes. I do have two bee apiaries near the garden. Raw honey is
my main sweetener. This is the first year I am also getting my own eggs
from my hen house. Each year I am getting closer to becoming self
sufficient for my own food. I will also say I am eating better than
ever. This does mean allot of work.

One food item that does not bother me is milk and cheeses. I know
celiacs cannot drink or eat dairy products. In the next few years I hope
I can afford a barn and get a few goats. My neighbor has small dairy
farm, I get my milk and beef from my neighbor.

I've had those, called "Enchiladas Suiza" (Swiss) and they are
quite tasty, much better than they look.
