Not a lost art so much as just a little known cooking method. I only
know about it cuz I saw it done as a kid chowing down at a ranch house
table. I only do it when I've just fried up a large batch of bacon
and have plenty of grease in the skillet. Not a very common set of
conditions in these health conscious non-stick low-fat times. I enjoy
doing when I can. Brings back fond memories.

When I was a kid you could order lightly basted anywhere that had
eggs. Very likely they used Crisco back then (before they knew
better).

I had to google them to see what they are. I've always thought of them
as just the correct way to cook eggs sunny-side up.

I do them whenever I have enough fat in the pan. If I don't I
usually add a bit of water and cover for a close equivalent.

I'm eating for lunch: in a wrap I put scrambled eggs(1 per small
wrap), topped with sauteed(nicely browned)mushrooms, onions and peas.
Season with lemon pepper. Warm the whole thing and eat it. Simple
but tasty. The other day I had similar but used bacon as well. Diced
tomato.

I low carb'd (Atkins) back in 2003. Dropped 70 lbs.! Didn't help my
cholesterol numbers much at all.

KEDGEREE

1 pound smoked haddock
1 medium onion, finely chopped
4 ounces butter
1 teaspoon garam masala
½ teaspoon tumeric
12 ounces basmati rice
4 hard boiled eggs, 2 roughly chopped, 2 quartered
½ pint heavy cream, warmed (optional)
Salt
Black pepper, freshly ground
1 tablespoon chopped parsley

Simmer the haddock in salted water for 10 to 15 minutes, but don't
over cook.

Drain the fish, saving the cooking water. Remove the skin and bones,
and flake the fish, keep hot.

Fry the onion gently in the butter with the garam masala and tumeric
until softened.

Cook the rice in the haddock water until tender, then drain and allow
to dry out a little.

Add the spiced fried onion to the rice and fold in the flaked fish and
the roughly chopped eggs.

Pour in the cream and add the quartered eggs. Season with salt, pepper
and parsley.

Oh, gee. I made a rather bland version when I was very young.
Haven't tried it since. This, with the garam masala, has more
potential.
