topped with droppings of "NEW YORK CITY???" chunky mild salsa and a tall

Ob Food:

Dutch Baby Pancakes

4 eggs
1/3 cup butter
1 cup milk
1 cup flour
1/2 teaspoon vanilla extract
Dash of salt

Preheat oven to 425 degrees.

Put the butter in a large cast iron skillet and place in the oven to
melt the butter and to heat the pan.

Put eggs into a blender and mix on high for 1 minute (I use a stick
blender). Add the remaining ingredients and blend for one more minute.

Remove the hot skillet from the oven and pour the batter into the hot,
melted butter. Bake at 425 for 20 minutes, until puffy and golden
brown. If there is any melted butter on top, swirl the pan to
distribute the butter all over the pancake.

Dust with powdered sugar and serve with lemon wedges. Honey or syrup is
good, too.

Pesto and salsa? That sounds... odd. BTW, I have used pesto in
a salade Nicoise-type creation and rather like that.

My brekky... A Chinese custard bun, and the 3 usual

Nah. I gave all the Onion Skin eggs away to my Chiropractors office crew.
They were most appreciative! Mixed in some dark chocolate "Dove" easter
eggs into the basket too. :-)

They thanked me again this morning for the Easter Bunny visit when I was
on the traction table for a cervical decompression treatment.

Can't you get them where you are? I'm so sorry! Every grocery store
around here carries them for around $1.39 per lb. It's cheap eating. ;-d

My goodness! Not only available but cheap. The only store I can
think of that might have them here is VERY expensive. Maybe I
will ask the butcher at WF out of curiosity. BUT even many years
ago when I bought them, they were expensive here.

Could not hurt. They are sold here in the section with the beef cheek
meat, calves feet, etc. Stuff that's inexpensive oddities.

I really do like them.

Since I'm introducing Lynda to them tho', next time I'll prepare them
the "traditional" way. Boiled, then remove the membranes, then use the
boiling broth to make a bechamel sauce and serve over toast or scrambled
eggs.

I prefer them grilled over mesquite rather than using the electric grill
like I did those, but it works. :-d

The sauce served ones tho' have their own appeal...
