Dutch Baby Pancakes

4 eggs
1/3 cup butter
1 cup milk
1 cup flour
1/2 teaspoon vanilla extract
Dash of salt

Preheat oven to 425 degrees.

Put the butter in a large cast iron skillet and place in the oven to
melt the butter and to heat the pan.

Put eggs into a blender and mix on high for 1 minute (I use a stick
blender). Add the remaining ingredients and blend for one more minute.

Remove the hot skillet from the oven and pour the batter into the hot,
melted butter. Bake at 425 for 20 minutes, until puffy and golden
brown. If there is any melted butter on top, swirl the pan to
distribute the butter all over the pancake.

Dust with powdered sugar and serve with lemon wedges. Honey or syrup is
good, too.
