There's a place near Colchester in the UK that serves up bacon "doorsteps".
Two, very, very thick slices of white bread sandwiching lightly cooked
rashers of back bacon. Heaven!!!

Add an egg 'over easy' to the large slice off of a shepherds loaf of
sourdough bread, toasted, with mayo & bacon and you get my breakfast to
go sandwich

I have yet to cut a hole in a slice of bread and cook an egg in the hole
in the bread but i occasionally shove buttered slices of bread into a
muffin tin, lightly toasted them in the oven, then break a couple of
eggs into them, S & P, after adding some chopped ham and/or bacon, green
onion, garlic, grated cheese etc. then bake in the oven till the egg
whites are cooked.

Remove from the muffin tins and serve in a small bowl. A much more
substantial dish than i can make with my individual coquettes.
