Default Candied Ginger Cookies

Candied Ginger Cookies

1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed dark brown sugar
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
2 eggs
1 teaspoon pure vanilla extract
2 3/4 cups all-purpose flour
1/2 cup crystallized ginger, finely chopped
additional granulated sugar for rolling dough balls

Beat butter with mixer on medium-high speed for 30 seconds. Beat in
granulated and brown sugars, cream of tartar, baking soda, ground
ginger, and kosher salt until combined. Beat in eggs and vanilla.

Stir in flour and crystallized ginger. Cover and chill dough for one
hour. Preheat oven to 375F degrees. Shape dough into 1 1/4-inch
balls. Roll dough balls in granulated sugar. Place balls 3 inches
apart on ungreased baking sheet lined with parchment paper. Bake for
8 to 10 minutes or until edges are lightly browned. Transfer to wire
racks to cool completely.

These sound wonderful.

I am addicted to a Trader Joe's cookie called something like "Triple
Gingersnaps". They are about the size of a US quarter and contain
ground, grated fresh, and candied ginger. They are sold in plastic
tubs (not as large as a few years ago) usually over the freezer compartment.

Unfortunately he closest TJ to me is ~500 miles away so I'd like to find
a recipe to reproduce their cookies. I'll try yours.
