I am addicted to a Trader Joe's cookie called something like "Triple Gingersnaps". They are about the size of a US quarter and contain ground, grated fresh, and candied ginger. They are sold in plastic tubs (not as large as a few years ago) usually over the freezer compartment. Unfortunately he closest TJ to me is ~500 miles away so I'd like to find a recipe to reproduce their cookies. I'll try yours. Thanks! gloria p |
