Default Candied Ginger

I was reading the other thread as I have never bought and used ginger
root. I love ginger candy-but all ginger candy is not the same.

One of you made reference to not buying the wrong kind of
ginger-explain?

This might explain the horrible ginger candy I bought the other day that
was made by a local health food store-as I chewed it reminded me of
shredded wheat-very fibrous-I threw it away.

Then there is the commercial ginger candy that is neatly wrapped in
squares of wax paper and it sticks to my teeth like glue though the
flavor is great.

Then there is the commercial ginger candy that reminds me of horehound
drops-rock hard relatively clear unsatisfying because of lack of chew-I
bet using these to make cotton candy would be interesting.

Finally, there is the commercial ginger candy that is round pellets of
CARAMEL ginger is how I would describe it-each tiny piece individually
wrapped (PITA)-perfect taste perfect chew doesn't stick to teeth.

Which one do you make and describe step by step please?

I made candied ginger, not ginger candies. It is probably more like the
one you got at the health food store, but mine is not fibrous. Maybe
they started with old stringy ginger root

From my experience, ginger tends to be inconsistent. I used to buy
candied ginger at a bulk store and it was not always exactly the same.
We buy ginger chocolates from a local chocolatier and the last batch is
much milder than the previous one, and much softer texture.


It is easy to make. It just takes a a bit of time, but not a lot of
work. Get some nice fresh ginger, peel it and slice into discs about
1/4" thick. Boil it in water for about a half hour. Discard that water
and add enough simple syrup to cover, bring to a boil and let it boil
gently for 2-3 hours until it softens. Test it to make sure it is the
texture you want. The syrup should be quite thick by this time. You can
cool it and store it in the syrup, or you can dry it and toss and store
it in granulated ginger. If you choose to toss it in sugar, it has to
be dry. The easiest way is to lay a sheet of waxed paper on a cookie
sheet and put lay the ginger out in a single layer and put it in your
oven for about 24 hours with the light on. That provides enough heat to
dry it out gently. If it is not dry enough when you add the sugar it
will melt and end up in syrup again. But that's okay because you can do
it in the oven again.


What to do with it.. it can be eaten like candy. You can dip it in
chocolate. It can be chopped up and used in baking. We are having some
tonight.... slivered and sprinkled on top of vanilla pudding along with
some grated lime rind.

That's unfortunate. I jes bought some home-made candied ginger from
our local health food store (HFS) and it's awesome! Half inch cubes,
soft, and ginger spicey hot. Only $3 fer 1/2 lb. May be the most
amazing dehydrated food I've ever tasted. I'll be trying all kindsa
new things with it.

I think the other thread the OP is talking about was about what
gingerpeople call "Crystallized Ginger". The right kind of ginger to
buy is as young as possible, the wrong kind is old and fibrous.

That is exactly why I said "Not quite to your point, but ..." I was
going off-topic to suggest something else that might have been

Try dipping it in chocolate, dark or milk.
I keep meaning to try making some pear and ginger muffins.

I just got some of their ginger spread. Love that stuff. Trader
Joe's used to carry it, but no longer. I got it from Amazon.
