I use fresh ground white pepper on everything. I started with white pepper on
light color foods as a rule then switched over entirely.

Oh, my word - a tiny lump would end the meal for me. That's why I'm
always reticent about mashed potatoes in a restaurant - in same
category as their oatmeal or grits.

I put mine thru a ricer - yeah, it's a lot more work, but the texture
is worth it.

szechuan pepper is completely different in taste and appearance from
white*or* black pepper. a completely different plant as well.

Somebody (McCormick?) makes one of those mixed peppercorns disposable
grinder for about 3 or 4 bucks. Try one. If you like it, good, if you
love it, get an extra grinder and incest in some Penzey's peppercorn
blend.

It depends - traditional made with russets, smooth - served
with things like roast turkey and gravy.

Smashed potatoes made with red potatoes and lots of garlic,
lumpy - it's part of the charm.

The one reason I actually like powdered spuds is childhood memories...
Mom only ever used them for camping trips. :-) Those and canned bacon.

I have some really wonderful memories of those time periods.

I do that sometimes. Red potatoes, and fairly rough mash (skins and
all). No garlic, but salt, pepper, butter, and sour cream.

I picked up a 4-peppercorn mix (McCormicks, white, black, pink and green
peppercorns) at the wholesale club this morning. I'm about due for a pepper
grinder refill so I'll devote a refill to the new stuff and see what
happens.

Well I haven't had black pepper in ages so, oh well. I couldn't get any
exotic aroma sniffing the open jar of peppercorns. I'll get a chance over
the weekend.

If used for breakfast lunch and dinner, the container will probably last 2
or 3 years! What I can't tell is if the 4 color peppercorns are mixed in
equal proportions.

I keep two pepper grinders on the table, one for white and one for
black. Originally, I got a little pepper grinder for black pepper. I
thought a small one would keep the pepper fresher, but I got tired of
refilling it so often. So, I bought a larger one for black pepper, and
use the little one for white pepper. I mostly use the white pepper for
cooking, though. I don't like black flecks in white sauce, cream soups
and mashed potatoes. Besides, my wife doesn't like pepper, so it's
easier to sneak white pepper into those foods.

Dan Abel,

I was just about to buy a three set of "Trudeau" pepper shakers from
amazon, given the sweet priced deal, but in a matter of hours, the deal
went south.

I was gifted the older Trudeau push button model pepper grinder and haven't
changed the battery yet. Maybe that explains the five minutes it takes to
churn out a single grain of fresh ground pepper? LOL!
