Default Simple and Inelegant Slow Cooker Dish for Potluck

Our annual Thanksgiving potluck at work is tomorrow. I usually try to do
something that no one else would bother doing, but it was just beyond me
right now.

I woumd up making a fresh corn and green chili mixture with a cream cheese
and butter sauce, seasoned with salt, black pepper, and a generous handful
of chopped cilantro.

We have around 80 participants in this pot luck, so there will be a lot of
food. The company suppies baked hams and roasted turkeys, employees
brining the sides.

I'd like to see what you cook up when you feel better.

Janet, have you ever had black bean salsa? The kind I had came from
Tastefully Simple, in a gift basket. It had lots of corn, black beans, very
fresh tasting tomatoes, and just enough heat. With seseme blue corn chips,
it was great. I had a hard time putting it down!

Actually, I was going to make my first batch this week. Costco hasn't
carried kidney beans here for some time (much to my disgust) but have
substituted black beans. So, off I went to Costco with plans of buying
black beans. There were none in the store!!! I guess with all the holiday
stuff in the store now they had to get space from some where. As soon as I
get to a regular grocery store, I'll get the black beans and make some. I
must say, it sounds delish. The recipe I was going to make was from Fine
Cooking? (I had to return the magazines as the subscriber was using a recipe
in there for a Thanksgiving dessert) As soon as I can I'll get the recipe
back. I love savory salsa and don't care at all for the sweet ones. How
about you? Do you prefer one over the other?

The magazine does have many of their recipes up on their website. You
might take a look there and then you'd have your own copy to try and
keep.

Wayne, that sounds like a delish dish. You may want to consider this
sometime for a dinner at home.

Fresh corn , cut off cob
saute in a little butter, add
chopped green onion, crisp cooked bacon pieces, and cilantro.
It is very go and an easy fast side dish.

I experienced this as a cracker spread at a meeting this week. I was
delicious and something that people clustered around.

To my way of thinking crockpots were invented for potlucks...meatballs in
sauce, apple crisps, bread puddings,chicken wings in a sauce are just a few
of the crockpot dishes that go well at a potluck.

Thanks, Dave. Actually, I had taken this dish to the same potluck several
years ago, and each year after someone always managed to asked if I was
bringing it again. It guess it was a good choice. My 4-quart slow cooker
was filled to the brim, and there wasn't a corn kernal left. :-)

process of putting it together. I figure you can hardly go wrong with
corn. Most people like it.

Yes, if for no other purpose than keeping food at the right serving
temperature, crockpots are ideal at potlucks.

Today I counted 27 crockpots containinng, stuffing, mashed potatoes, mashed
sweet potatoes, candied sweet potatotes, my corn dish and another one that
was different, green bean casserole, sweet & sour Brussels sprouts, and
probably some things I've forgotten. Of course there were duplicates and
variations.

There was also a plethora of both vegetable and fruit salads, vegetable and
fruit platters, a variety of really good dips for the veggies, etc. I've
lost count of everything.

There were pies, of course, pecan, pumpkin, apple, banana cream, chocolate,
and coconut cream. There were profiteroles and pumpkin cake, gingerbread,
and carrot cake. There was a delightful fresh raspberry cheesecake and a
plain one. The dessert that had me going back for seconds was made by a
co-worker from Mexico. She brought caramelized fresh peach enchiladas to
die for!

The company supplied Honey Baked Hams and roasted turkeys. In all, there
were 12 banquet tables laden with all the food that was brought. There was
not very much left by the time everyone was finished. Extras went to some
of our outher sites for the residential patients.
