Default Veggie salad

After all the over eating last weekend, it is time to get back on
track.

Lunch yesterday was a delicious veggie salad made with canned niblets
corn, kidney beans, steamed snow peas, green onion and spinach.
I spiced it with a little chile powder, salt and drizzled some olive
oil and cider vinegar over it.
Before I took off for work I threw in some left over wild rice. It
needed a little more dressing so I added just a little Zesty Italian
Dressing. (after the photo was taken)

For dinner last night, Lin and I had a big salad: Lettuce, Old-Bay-boiled
shrimp, mango, avocado, ugli fruit supremes, pasta, chopped pickled ginger,
edible flowers, red onions, and thinly sliced jícama, dressed with a nonfat
honey-citrus dressing.

Hmmm...thanx for the snow peas reminder, I'm on way out to the Asian grocer
and I'll pick some up. Very lightly steamed in the microwave would work in
a salad, they'd be good in a "vegetable medley" side dish for a main course
too...red bell peppers are on sale, combined with some carrots they'll make
a tasty and attractive trio to serve alongsides that pork roast I'll be
making on Sunday.

Lunch will be at the Chinese BBQ joint (Sun Wah, on Argyle St. here in
Chicawgo), we'll have some BBQ meats as an app and then I think I'll spring
for the shrimp stir - fried with Chinese veg. These shrimp are nice and
big, they have a real bite and are not mushy like some of the limp 'n
listless pussy shrimp that are fairly commonly served at lotsa places...

I've recently re-developed my love affair with Olive Garden's
"signature" Italian dressings.

Gods that stuff is good!

They will sell it to you in a really nice bottle too.

Don't know why I didn't do that. I usually add them, especially when
I make the salad with black beans, really yummy.
