Default Pork Shoulder, Low-and-Slow

Thursday, bought and rubbed 25 lbs. of pork shoulder from the
local Costco. I've borrowed the FIL's DIY-smoker for this very
reason. Just finished setting it up and plan to pop in some apple
chips-and-shavings.

Sides will include jalapeno cabbage slaw, cornbread (not corncake)
spears, and Bush's Molasses Baked Beans.

The clan's looking forward to feasting tonight. Should be a fun
time by all.

Heck, with 25 pounds of pig, it better be!!!

Sounds like I should attend, you know, as the King's taster!? Can't be too

I've not done pork roast in awhile. Perhaps in a couple of weeks. I've

I must be doing something wrong. How did you finish them in time for
dinner? Your post shows up at 8:37. I assume you're on the left
coast? Shoulders take me about 15 hours. What am I missing? I
usually start them about 2 am for dinner.
