Default Any EASY but delicious [mostly] vegetarian recipes?

My older son announced his engagement last week and he and his "fiance"
(ohhh that sounds funny!) are coming over for dinner. I have some
apps, bought a bottle of champagne (the important stuff) but for the
life of me, I can't decide on a dinner. I was thinking sprimp
allfredo, but I am the worst cook. I'm used to just throwing food
together for me and my daughter and we've been [mostly] vegan for so
many years, that's it's hard for me to get back into the world of
non-vegan.

I have a package of frozen shrimp, lots of pasta from Italy (thank you
costco), a HUGE bag of organic, frozen asparagus, great crunchy thick
crusted bread with garlic in it, and I leaning on doing something with
those foods. I'm open to changing it entirely though if anyone knows
of a foolproof, easy dinner recipe. No meat please, I have to draw the
line somewhere. My daughter in law to be knows that this mother in
law, ain't makin meat!

She is a sweetheart and she and my son are lovely little omnivores,
balancing all of the food choices. They'll be fine with a dinner
without meat :-)

Congratulations to your son!

I would make a big pot of pasta and serve it plain (maybe tossed with
a bit of olive oil or butter) with a choice of toppings. One choice
could be shrimp sauteed with garlic in butter or olive oil. Another
choice could be grilled or sauteed veggies, including your asparagus.
Have some parmesan and red pepper flakes on the side. Everyone can
mix and match. Top it all off with garlic bread and a big green
salad. Serve sorbet for dessert.

I think I love you. That's sounds quite easy :-) Can the salad be
from a bag? I'm sorta kidding!

I would saute apples in butter and olive oil with some garlic and sage, add
the asparagus, add the shrimp and then toss with the pasta. That's what I
would do but I've been sauteeing apples in garlic, sage and butter all week
and i'm addicted right now.
