Default Do What You Gotta Do

Made a buying mistake a couple of days ago, choosing the on-sale large
red tomatoes instead of the on-the-vine tomatoes I've been having good
luck with this year. (The home garden plants are done, except for the
cherry tomato.) Naturally, they turned out to be the
picked-too-soon-they'll-never-ripen-properly kind. So this morning I
wanted an egg sandwich for breakfast but this tomato wasn't going to
enhance it. Drastic measures called for.

While the toast was working I heated the nonstick egg pan with a dab of
butter, then laid a thin slice of firm tomato in the pan, sprinkling
with s&p. Flipped it after a minute and let it continue
heating/cooking while I spread the toast with mayo. Then a piece a
lettuce onto which I slid the now slightly colored tomato. Quickly
scrambled an egg to top the tomato.

Turned out much better than the untreated tomato would have been. Good
start to the day. -aem

Try a tiny sprinkle of sugar, too; it helps to enhance the tomato flavor.
