Hey, if it's no good, it's no good. You can, of course, always do what
you want. The list is meant as a basic guideline, not as a list of
limits.

I'm still an uneducated amateur, still fishing my way through the
labyrinth of cooking in all its complexity. For someone like me, this is
a fairly good resource. It gives me a basic idea of what things go with
what. Certainly I would also experiment. But as a basis, this is
possibly a start, at least for some people. If it doesn't work for you,
it's because it's too pedestrian, and you're advanced in your craft. I
admire that expertise, but I don't have it myself.

Yes, as well as read recipes.

There's nothing wrong with your posting these lists, though I have no
idea why they got put on the rfc website. I just don't see how these
listings are useful, that's all. They are catchalls, on the one hand,
and incomplete on the other hand.

You'd do better, when wondering what spice/herb to try with something,
to grab some containers out of your spice cabinet, unscrew the tops and
sniff them. Seriously. Some parts of cooking approach science, others
art. Choice of spices and herbs is closer to art, but also very
reflective of various culinary traditions. -aem

You mean you think it's WRONG to use bay leaves in fish, or saffron in
rice, and so forth, as well as the other choices given on that list?

Isn't there some old idea that we can only write about what we know?
sheldon and his ilk routinely revel their own ignorance in their routine
assessment of others intelligence and usually an assessment of a lack
thereof, apparently that's all they know how to do so all they write

I think that simply considering them demented lets them off too easy, as
if they are not responsible for their actions.
