Default Fast Fish Feast

I've been eating a lot more fish these days... and since I work till
about 7 or 8 most nights I needed a quick way to make great fresh fish
(I'm not that fond of the frozen stuff).

So most nights I rev the oven up to 450... and take whatever fillet I've
bought and place it on a big piece of tin foil... Then I get creative.

Tonight was salmon with some fresh grated ginger, salt, pepper, a
drizzle of sesame oil, a few matchstick carrots, chopped garlic and a
dab of hoisin sauce... then you seal the tin foil around the fish and
bake for 20 minutes. The trick is when you add veggies and such, just
add a bit... and always chop or dice them fine... that way they cook
through. You don't want to overpower the fish.

Other recent combos included:

Catfish with roasted red peppers sliced into thin thin strips/finely
diced onion/olive oil/salt/pepper/cajun spice.

Tilapia with /kalamata oilives/diced tomatoes/olive oil/basil
leaves/garlic/salt/pepper

Swordfish with capers/lemon juice/dill/a small pat of
butter/salt/pepper/lemon zest (the zest is what adds the lemon flavor...
the juice just adds the tart)

Halibut with rosemary/orange zest/balsamic vinegar/teardrop
tomatoes/salt/pepper/olive oil

Swordfish with garlic/anchovies/basil leaves/olive oil/ salt/pepper

You get the idea...

The best thing is the clean up! Just bunch up the tin foil and toss!
