Quinoa is an excellent substitute for rice or potatoes. It is gluten-free. It is cooked just like rice but does not have the carbohydrates that give rice the high glycemic index. I have cooking tips and recipes on my website Monica's Fine Foods. If you are not looking for fancy recipes, just cook it and pour some Davoli extra virgin olive oil along with a pinch of salt and pepper. Toss and enjoy!
