Eating low carb foods
 
Quinoa is an excellent substitute for rice or potatoes. It is gluten-free. It is cooked just like rice but does not have the carbohydrates that give rice the high glycemic index. I have cooking tips and recipes on my website Monica's Fine Foods. If you are not looking for fancy recipes, just cook it and pour some Davoli extra virgin olive oil along with a pinch of salt and pepper. Toss and enjoy!

Quinoa is NOT low carb! It is also not cooked just like rice. Why don't
you go away with your spam?!

Yeah, quinoa hasn't seemed low carb to me when I read the label. And it is
expensive. And when I've had it in the past I was unimpressed. It could be
billed as a replacement for couscous...and I suppose it is a good choice if
you have issues with gluten.

The first time I made it, I did it as a pilaf. Angela thought it was rice
and loved it. It didn't love me. Raised my BG more than rice would.

I did try it a second time. Angela hated it!

I do buy a corn and quinoa pasta. I use it in pasta salad. Works for me
because I put so many vegetables in it. Not so much pasta. Angela does
like that.
