I don't know if Angela eats treats or not, but this recipe was for
gluten-free chocolate cookies in the Relish magazine and I thought of you and Angela. Maybe you can try it, or maybe there are things that you and she can't eat in it. Dunno for sure. Chewy Flourless Chocolate Cookies (gluten free) 1 3/4 cup powdered sugar 1/2 cup dutch process cocoa 2 tsp corn starch 1/4 tsp salt 2 egg whites 1 cup coarsely chopped pecans, almonds, or walnuts, toasted. Preheat oven to 300F. Mix together sugar, cocoa, cornstarch and salt. Gradually add egg whites, stirring with a spoon until mixture forms a dough. Mixture should be thick enough to form into balls, if not add more powdered sugar and cocoa. Add nuts, mix well. Form dough into 15 balls, place on a parchment lined baking sheet. Bake 16 to 19 minutes, until glossy and crackled. Cool completely. Makes 15 cookies. Per cookie: 110 cal, 7g fat, 0mg chol. 1g prot. 16g carbs, 1g fiber, 45mg sodium. |
