Default Spinach Kugel Report

OK, so I made the spinachkugel I sent the recipe for earlier. Seved it to
family, includign 5 ear old Zoe who is not big on vegetables. As she eats
kale, of all things, but never heard of spinach, her folks told me to tell
her it wa spinach-kale. She loved it and ate up her whole small orion. I
was thrilled!

Some comments. I made it in a 9x14" pan which is what I had. i woudl use
a 7x11 pan next time, as I think thicker would be better. i would do that
if I had one:-) It was a great success. I did use mroe mushrooms than
the recipe called for and that didn't hurt. We had the 2 pieces of
leftovers this morning for a brunchy kind of breakfast, as we slept late.
I sugest you try it as my bg's were excelled at about 3 hours (87). the
rest of the meal wias a big green salad, 2 wasa crackers with vegetarian
chopped liver and my low carb cheesecake.

Just thought you would like to hear.

I have NEVER had such a low 2 hr ppbefore. I stil aim for 120, but often
get into the low 100's or high 90's

Default Spinach Kugel Report

It all sounds good!

My first cheescake was delicious and took me a entire week to eat but it got
better each day.

It is amazing how much good food there is to eat when your forced to give
up junk and eat right.
I would take a slice of my cheesecake over krispy kreme everytime even if i
wasnt diabetic..if i was somehow cured id not revert to old eating habits as
they just dont taste as good.

ive spoiled my tastebuds.
