Default Fried mussel dinner

Fried New Zealand mussels, fried tapioca and egg, bean sprouts and
cilantro. Sriracha for dipping. One hour postprandial BG 202! Methinks too
much tapioca. ;-(

As far as I can tell (Jun throws me out of the kitchen if I ask too many
questions), She scrapes fresh Yucca (I think), boils the tapiocal until
it's the 'right' consistency, then drops spoonfuls of it in a hot oiled
wok, stir-frying 'til crispy on the bottom. It appears that I should treat
tapioca, like rice, as if it were sugar. ;-/

why do you keep reporting on these dinners that I can't eat:-) maybe
osomething with finny fish or a meat dish wit no cheese:-)

Wendy, I'm just a Sichy goy from da Bronx! My wife, Jun, is Thai. I report
on what I eat, so others can learn from my mistakes and, perhaps, show me
the error of my ways. Cheese? No cheese in Thai food. Watch out when I nake
my lasagna or eggplant parmesan! Substitute a finny, scaly fish for the
mussels! Everything else is parve. Neither of us should eat much tapioca,
rice, corn, potato or bread!

Heh heh! The other day, Jun was scraping yucca. I asked her if she was
making tapiyucca. She said that she buys the tapioca. Googling revealed to
me that commercial tapioca comes mainly from the cassava, but that yucca
also contains it. I wasn't aware of the associated toxicity.
