I wish I had the time, but perhaps when I get my restaurant/lounge up and
running smoothly I'll have more time to check in here.

The briskets I did this weekend were separated point from the flat, but they
were rougnly done compared to your pictures. You've been informative for
next time. I've only cooked a half dozen briskets so thngs are improving on
that front.

Mike;
I'm going to try your method of cooking brisket this weekend. At
any point during the cooking do you re-apply the mop/marinade?

Have you used a dry rub with marinade, or is that too much?

Sorry to reply late, Jean and I took a two day trip to Charleston and
just got back. To your question, I don't reapply mop because I'm
cooking indirect. That being said, I don't think mopping a few times
will hurt either as long as you don't reuse the mop you marinated the
brisket in, set aside 1 cup for basting prior to using on beef.
