How long can you refrigerate smoked/roasted garlic?
The wife has an outstanding crop this year and I would like to do a bunch ahead of time for convenience. Jay |

While whole garlic will stay for a long time if kept in a cool dry place, the PH of garlic is > 4.6, so it has to be acidified in order to keep longer than you would expect any vegetable to keep in the fridge once they're "processed." Most "garlic in water" preparations that you buy at the store have sodium benzoate added to reduce the PH to a safe level (an "acidified food"). Lemon juice, lime juice, and vinegar will also work. Personally, I've never seen how long it lasts.
