There was a great web page with instructions and illustrations, but it seems
to be gone now. Search for "imu".

In general terms, in Hawaii, they build a mesquite fire with several large
round rocks in it.

When the fire burns down, they place the pig on a wire mesh, place some of
the rocks in teh pig and others around teh pig. The cover the pig with
banana and ti leaves, then several layers of cloth, and then dirt.

7-8 hours later (for a smallish pig), they dig it out and the meat is ready
to pull.
