Hand Made Noodles?

There's a few people from LA here, but you might try asking in
la.eats, too. No many posts there, but I think there's some
lurkers waiting in the shadows for some serious inquiries.

Default Fresh Noodles

Does anyone know a place around Los Angeles that I can get the type of
noodles that are made by using the dough as a weight, folding it and droping
it so each fold becomes a strand of noodle, then repeating the process.
Sorry I don't know the official name of the noodles. I'll be in LA next week
and would love to have these noodles again.
