Default Anticipated maturity

Does anyone have info or a link to info regarding average
aging time to prime drinkability for different varietals?
I'm specifically interested in Petite Sirah, Zinfandel,
Zinfandel (old vine), Sangiovese, and Cabernet.

Thanks.
