I was at a local winery this weekend and the owner told me about a new
type of champagne yeast he saw at a trade show recently which makes riddling easier. According to the vendor, whose name he forgot, this yeast crystalizes when it dies so it doesn't stick to the inside of the bottle like regular yeast. It's not yet available on the retail market. Has anyone heard of this? Paul |
