I was out in the country this weekend.
I noticed many bushes on the side of the road near farmland. I assume the bunches of white blossoms are elderberrys. When will the fruit be ripe? (approximate) I assume I need 15 lbs of fruit for a 6gal batch? Can I use my grape juice type strainer to get the juice? It is a perforated cone with a wooden club to smash the grapes. It can be lined with cheese cloth. Or will I want to destemm and ferment on the skins? thanks |
