Default Mago wine and topping off

This is the first Mango wine I am making (1 gallon). I am going to be
racking from my secondary to another secondary soon. What should I use to
top off the secondary when I rack? There is a decent level of sediment on
the bottom, so I figure I will have a lot of headspace.

Default Mago wine and topping off

Your supposed to top off with a similar wine but I've always been bothered
with topping off myself. If your making a mango wine for the first time you
obviously don't have any to spare for topping off and since your supposed to
top off every few months until clear..... hmmm

When making wine from scratch I always make a little extra, say 1 litre and
so when I rack to the carboy for the first time I'm left with extra wine
which I put in a smaller bottle. Then on second racking I have enough for
topping off but then nothing for the next time so I open a bottle of
whatever's fermenting or as close as possible and top off with this but it
doesn't always work out that way depending on what you have stocked up.
Phew! that was a long sentence!

Kit wines are a bigger problem because they don't give you the extra you
need for topping off so you have to rely on what you have or go out and buy
some P

Default Mago wine and topping off

Not knowing what you have to top off with, I would suggest peach. Banana
would be a good non-descript wine. Apple may work. If all you have is
grape, maybe Chardonnay. Taste it and if it is low or high in acid you
might pick a wine to adjust it.
