I want to thank all those who enlightened me a few months ago about the
differences in adding oak during primary vs. after fermentation. I decided to make my first real batch of concord wine from commercial grocery store juice and I wanted oak to integrate well. I added oak chips to the primary. It's now coming on two months and beginning to clear nicely. I must say, I am very happy with the way the oak is part of the wine and rounds out the flavors as opposed to just tasting like an oak addition - on top of the wine.
