Default Cherries and mead

About 6-7 yrs ago I gave my wife a cherry tree for Mother's day. We
get enough cherries after the birds to get about 1 pie's worth of use.
If I were to get a gallon of cherries off the tree can you all give
me a mead recipe using these cherries? I'm new to mead making and
would like to know some rules of thumb, if there are any about the
honey to fruit ratio. What about the sour cherries versus the honey
used in the mead. Give me your recipes or references to recipes,
please.

What if I only got 1/2 gallon of cherries? Do they go by volume,
weight? Any recipe help would be lovely.
