Hi, group...
has anyone done much with "berry blends?" I had a strawberry that I was never really satisfied with. Had a bit of a harsh flavour...don't know if the alcohol content was too high, I suspect maybe it sat on the lees and seeds a bit too long...so i tried and tried to get the taste to mellow out...without adding too much sugar to sweeten it. One day I had a bit of blackberry (one of my favourites) and a bit of strawberry left.... mixed the last bit remaining into a wineglass....and was very much pleased! They really complemented each other, taking away some of the harshness of the strawberry, while really enhancing the blackberry with a bit of crispness! tomorrow for Christmas we'll be having some people over, and I've taken a 1.5 L and dumped one bottle of each in there, so we can share it tomorrow! I mixed strawberry, dandelion, pumpkin, and blackberry - I had a lot of leftover top-up. It'll be interesting and I'll let you know. Unfortunately, it is still bulk aging. I also did try a gallon combo of rhubarb, strawberry, and blueberry, but that to is bulk-aging right now. Both are too young to drink. Let me know how yours turns out. Happy holidays!
