Ingredients:
50 g Plain flour
Salt and pepper
450 g Whitebait
4 tbls Milk
Oil
Parsley
Lemon wedges

Blanchaille du chef Serves 4 1. Sprinkle the flour with salt and
pepper. Coat the whitebait in the milk and then in the flour. 2. Heat
the oil - it is at the right temperature when a cube of bread turns
golden in 1 minute. Add the whitebait and cook for 5 minutes or until
crisp, 3. Drain the fish on absorbent paper, garnish with the parsley
and lemon wedges and serve immediately, Freezer: whitebait are usually
sold frozen in 450 g bags. If you do not want to cook as much as this,
remove what you need and put the rest back in the freezer straight
away as the whitebait quckly thaw. find all recipe here.
