Default Deep-Fried Bean Curd

Deep-Fried Bean Curd¡¡
Ingredients:


14 oz (400 g) fresh bean curd (tofu)
1/4 tsp scallions, chopped
1/4 fresh ginger, chopped
1 tbsp salt, or to taste
1 tsp rice wine
3 cups (750 ml) vegetable oil for deep-frying; uses about 3 1/2
oz (100 ml)
2 tbsp (30 g) flour
2 eggs
1/4 tsp MSG

Directions:




1. Cut the bean curd into 1/4 inch (6 mm) diamonds. Spread on a dish
sprinkle with the scallions, ginger, MSG, salt, and rice wine. Let marinate.
Beat the eggs.

2. Heat the oil in a wok to about 210oF(100oC), or until small bubbles
just appear around a piece of scallion green or ginger when tossed into the
oil. Dip the bean curd into the flour and then into the egg. Add to the oil
a few pieces at a time. Deep-fry until brown. Remove and drain well. Place
in a dish. Garnish with cooked green leaves and serve.

from fat. True, tofu won't have cholesterol, but the protein:fat ratio
is still about the same.

Don't take this personally, Nicholas. I'm going to start analyzing other
recipes when they're too fatty or too sugary. Many recipes offered in
this group are categorically unhealthy, even for "vegans." It's time
these people shape up.

into the egg"? We do have eggs in this recipe.

You can just replace the eggs and flour with cornstarch/cornflour.

Once you deep fry tofu, you have turned it into something VERY unhealthy. Anytime
you have tofu, ask to have it steamed, or at most, stir fried with as little oil as possible.

Correct! It's much healthier to squeeze out the water and bake it before
using if one wants the firmer, crispier texture without excess calories
and threat of free radicals from deep fried foods.

Everything in moderation. If enjoying fresh cooked falafels is wrong
then I don't want to be right.

Deep fried tofu is great. I have a great recipe for 'British Style
faux Fish and Chips' that I make a couple of times a year. Great
treat. In moderation.

I drive fast, drink beer, go to smokey pubs, visit loud nightclubs and
eat deep fried food. All in moderation. I call it 'enjoying life to
the fullest'.

I'd rather die at age 75 and enjoy each minute of those years than
live to be 105 surviving on steamed vegetables and hiding from life
and flavour.

But it's all about different strokes for different folks, right?

I'm inspired by a comedy routine that Bill Hicks did many years ago:

"Ever seen that commercial Yul Brynner did right before he died? 'I'm
Yul Brynner and I'm dead now because I smoked cigarettes.' Okay.
That's pretty scary, but they could have done that with anyone. How
about Jim Fixx! Remember the big runner who died while jogging! 'I'm
Jim Fixx and I'm dead now and I don't know what the **** happened. I
jogged every day, ate nothing but tofu, swam 500 laps every morning.
Yul Brynner drank, smoked and got laid every night of his life. I'm
running around a dewy track at dawn, and Yul's passing me on his way
home in his big, long limousine, cigarette in one hand, drink in the
other, two girls blowing him. Where did I go wrong ?!'

Jim--look at the hamstrings on that corpse. Look at the sloppy grin on
Yul's corpse!"

I do enjoy stir fired tofu and tofu in soups. But I also enjoy malt
vinegar soaked tofu in beer batter that's been deep fried served with
chips along with a few beers.

Life is too short to waste on dull food.
