In pioneer days hydration meant a dipper of creek water and flour dumped
into the starter
till it could be mixed into a batter for pancakes, or a hunk of dough for
bread. It's leavening! That's all! It's leavening, used because they didn't
have commercial yeast in pioneer days.

The old-time sourdoughs didn't know hydration from lowdration. Nor
did they have to.
