Default Aussie Beef Curry

Aussie Beef Curry



1 kg beef round steak

1 tablespoon vegetable oil

1 large (200 g) onion, chopped

1 tablespoon grated fresh ginger

1 tablespoon curry powder

1/2 teaspoon ground turmeric

1/2 teaspoon ground coriander

3 cups of good beef stock

2 medium apples, peeled and chopped

2 tablespoons fruit chutney

2 tablespoons desiccated coconut

1/3 cup sultanas

13 cup chopped fresh coriander (cilantro) leaves



Cut steak into 3 cm cubes. Heat oil in a large pan and cook steak in

batches until browned. Remove from pan - add onion, ginger, curry

powder and spices to the same pan, cook, stirring until onion is

softened. Return steak to the pan together with stock, apples,

chutney, coconut and sultanas. Cook in oven 180oC or 350oF for about

an hour or until meat is cooked and sauce slightly thickened. Stir in

coriander. This is lovely served with a banana sambal (chopped

bananas tossed in lemon juice and then in coconut) and a tomato sambal

(chopped tomato and coriander).
