Backyard Clambake
Serves:4 Ingredients 4 chicken drumsticks 4 ears of fresh corn, husked and cleaned 12 oz. lite smoked sausage link, cut in four pieces 12 clams 1/3 cup butter 2 tbsp. chopped fresh chives or basil Instructions 1. Preheat grill to medium. Sprinkle drumsticks lightly with salt and pepper. 2. Grill chicken 35 to 45 minutes or until chicken is tender and no longer pink, turning occasionally to brown evenly. Place corn on the grill 10 minutes after starting the chicken, cooking 25 to 30 minutes or until tender, turning occasionally. Add the smoked sausage pieces the last 10 minutes of cooking, turning the sausage once. Add the clams the last five minutes of cooking. Carefully watch the clams as they cook; remove from grill as they open. 3. Meanwhile, melt the butter and stir in chives or basil. 4. Serve butter for brushing on corn and dipping clams. Any recipe notes or blurbs: Scrub clams with a stiff brush then soak covered in lightly salted water for 15 minutes; drain. Repeat soaking twice. Discard any clams that do not open when cooked.
