Citrus Smoked Shrimp
Serves:6 Ingredients 1 cup hickory wood chips 1/2 cup orange juice 1 tbsp. grated lemon peel 1/4 cup lemon juice 1 tbsp. vegetable oil 1 tbsp. honey 2 lbs. fresh shrimp in shells Instructions 1. Cover wood chips with water; soak 30 minutes. Mix remaining ingredients except shrimp in a plastic bag set in a bowl. Add shrimp, turning to coat; seal bag. Cover and refrigerate 30 minutes turning occasionally. 2. Drain wood chips. Prepare and heat smoker using wood chips. For charcoal smoker, use 2 pounds charcoal briquettes. 3. Remove shrimp from marinade; pour marinade into water pan in smoker and add water to fill line in pan. Cover and smoke shrimp about 45 minutes or until pink and firm.
