Sautéed Chicken with Cranberry Mango Sauce
01/29/2002 by: Chef Chas Senic/Norfolk Waterside Marriott Ingredients: 1 8 oz skinless chicken breast 2 tbsp seasoned flour 1 tbsp sundried cranberries 1 ounce diced mango 2 ounces orange juice 1 tsp orange and lime zest 2 tbsp clarified butter Directions: Dredge breast in seasoned flour. Heat clarified butter in sauté pan, add chicken breast, sauté until done and golden brown. Directions for sauce: Heat small amount of clarified butter in sauté pan. Add diced mango and sundried cranberries and sauté. Add orange juice, bring to a boil and reduce. Add zest and reduce further. Ladle sauce over sautéed chicken. |
