Default Stock Pot -- Chicken or Turkey

Stock Pot -- Chicken or Turkey a La New Perry Hotel

All boney pieces of chicken or turkey
(wings, necks, backs, giblets, etc.)
Fresh and left over vegetables
(carrots, green or red bell peppers, onion pieces sweet type, mild,
celery tops, etc.)
Optional spices to taste
Salt and black pepper to taste

Combine all ingredients in a soup pot, covered with water. Boil, strain
and refrigerate. Quick refrigeration brings fat to the top as it
solidifies. We remove as much fat as possible. Leave just a bit, if
desired. This is where good flavor comes from.
