Mama's Applesauce Cake

3/4 cup shortening
2 cup granulated sugar
2 eggs
3 cup sifted flour minus 2 Tbsp.
1 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cloves
1 tsp. nutmeg
2 tsp. cinnamon
2 cup applesauce
1 cup raisins
1 1/2 cup chopped dates
2 cup chopped pecans

Preheat oven to 350 F.
In mixing bowl, cream shortening and sugar. Beat in eggs.
In another bowl, sift together flour, baking powder, baking soda,
salt, cloves, nutmeg and cinnamon; add to creamed mixture alternately
with applesauce, beating after each addition. (Depending upon the
moistness of the applesauce used, you may wish to add 1/4 to 1/2 cup
milk if the batter seems a little stiff.)
Stir in raisins, dates and pecans. Bake in greased and floured 10-inch
tube pan for 1 1/2 hours or until cake tests done.
Delicious as is, or serve with ice cream or sauce. Or glaze lightly if
desired.

Yield: 16 Servings

Cake:
2 cup Flour
1 1/3 cup Whole wheat flour
2 tsp Cinnamon
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
2 cup Applesauce
1/4 cup Apple liqueur
1 cup Unsalted butter; softened
2 cup Light brown sugar; firmly packed
3 Eggs
1 cup Raisins
1 cup Pitted dates; chopped
1 cup Walnuts; chopped

Cream Cheese Icing:
1/2 cup Unsalted butter; softened
4 oz Cream cheese; softened
1 Navel orange; zest of
3 cup Powdered sugar
2 Tbsp Apple liqueur

Cake:
Preheat oven to 350. Butter and flour a 10 inch
tube pan; set aside.
Sift flours, cinnamon, baking powder, baking soda
and salt; set aside. Combine apple liqueur and
applesauce; set aside.
Cream butter until light. Slowly beat in brown
sugar until very light and fluffy. Reduce speed to
medium, beat in eggs, one at a time, beating well
after each addition.
On low speed, alternately beat in flour and
applesauce mixtures, starting and ending with
flour, just until combined. Stir in walnuts,
dates, and raisins by hand.
Spread evenly in prepared pan, smoothing top. Bake
until cake tests done, about an hour. Cool in pan
on wire rack 15 minutes. Invert onto rack, turn
right side up and cool completely.

Cream Cheese Icing:

Beat butter and cream cheese until light. Beat in
orange peel. Reduce heat to medium; beat in sugar
alternately with liqueur until smooth and creamy.
Adjust consistency, if needed, by adding more
sugar or liqueur. Spread on top and sides of
cooled cake.

Applesauce Cake

1/2 cup butter, softened
1/3 cup white sugar
1/3 cup brown sugar
3 egg whites, lightly beaten
1 1/2 cups applesauce
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon salt
1 teaspoon pure vanilla extract
2 cups unbleached white flour
2 teaspoons baking soda
1/2 cup sliced dates (optional)
1/2 cup chopped walnuts (optional)
1/2 cup raisins (optional)
Confectioner's sugar

Preheat oven to 350. In a large bowl, beat together the butter and
sugars until smooth.
Add egg whites, applesauce, cinnamon, cloves, salt and vanilla,
then mix well. Add the flour and baking soda. Stir until blended, then
add the dates, walnuts, and/or raisins, if desired.
Pour the batter into a well-buttered Bundt pan. Bake at 350 degrees
for 45 minutes, until a toothpick inserted in the center comes out
clean. Let the cake cool slightly, then turn it out upside down onto a
serving plate. Sprinkle with confectioner's sugar if desired.

Helpful Hints:
You can use a tube pan instead, but you won't want to turn it upside
down on the plate.

Mother's Applesauce Cake

3 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
1/2 cup butter
2 cups packed brown sugar
2 eggs, beaten
3 cups unsweetened applesauce
1/2 cup raisins
1/2 cup dates, pitted and chopped
1 cup chopped walnuts
1/2 cup butter
1 cup packed brown sugar
1/4 cup milk
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar

Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
Cream together 1/2 cup butter or margarine and 2 cups brown sugar,
beating until light and fluffy. Mix in eggs. Add flour mixture into
creamed mixture alternately with applesauce, beginning and ending with
flour mixture. Stir in the raisins, dates, and pecans. Pour into
greased and floured tube pan.
Bake at 300 degrees F (150 degrees C) for 1 1/2 hours, or until
done. Cool.
To make icing, melt 1/2 cup butter or margarine in a small saucepan
over low heat, and stir in 1 cup brown sugar. Boil for 2 minutes. Stir
in milk, and continue to stir until the mixture returns to a boil.
Remove from heat, and cool for 5 minutes. Beat in vanilla and
confectioners' sugar. Frost cooled cake.

Makes 14 servings

Mother-in-Law Cake (Applesauce Cake)

Use only unsweetened Dutch cocoa, pure maple syrup, and fresh eggs.

2 cups all purpose flour
3/4 tsp. salt
1 1/2 tsp. baking soda
1/2 cup vegetable shortening
1/8 cup cocoa
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. allspice
1 1/2 cups granulated sugar
2 large eggs
1 1/2 cup applesauce
3/4 cups raisins
3/4 cups walnuts
3/4 cups dates (pitted and chopped)

Preheat oven to 350.
Spray a 9-inch bundt pan or two 3-inch by 8-inch loaf pans with
vegetable oil spray.
Mix all the dry ingredients. In the large bowl of an electric mixer,
cream the shortening with the cocoa and spices; gradually add sugar
until fluffy. Add the eggs one at a time, mixing just to incorporate
them after each addition. At low speed, add the flour mixture,
alternating with applesauce. Fold in the raisins, walnuts, and dates.
Bake in a greased bundt pan or two loaf pans for 55-60 minutes. Frost
with Maple Butter frosting .

Maple Butter Frosting

This frosting is the perfect finish for Mother-in-law cake. It's also
a tasty and slightly different frosting for other fruit-flavored or
white cakes. Please use real maple syrup; artificial maple syrup
(pancake syrup) is a waste of time and calories!

1/3 cup butter or solid vegetable shortening
1 pound sifted confectioners' sugar
3/8 cup real maple syrup (pure, don't substitute)
1 tsp. vanilla (pure, don't substitute)

Blend butter or shortening and sugar in mixer or food processor. Add
vanilla and maple syrup, and beat until very smooth. Spread on
Mother-in-law cake ! It also frosts 2 layers or one 13x9 oblong cake.
