Baked Peach Crunch

8 ozs. peach slices in juice, drained
2 Tbsp. raisins
2 tsps. honey
1/4 tsp. ground ginger
1/4 cup 40% bran flakes or other flaked cereal, crushed
3 Tbsp coconut shreds
1/4 tsp. ground cinnamon
1 tsp. margarine, melted

Preheat oven to 350 degrees, coat a 1-quart casserole with nonstick
cooking spray. Combine peach slices, raisins, honey and ginger in
casserole; toss to coat. Combine crushed cereal, coconut and cinnamon,
sprinkle over peach mixture. Drizzle margarine over cereal mixture. Bake
for 15 minutes, or until thoroughly heated. Makes 2 servings.
