Default Cranberry Relish

Cranberry Relish

2 (3) cups Fresh whole Cranberries
Zest/grated rind of 1 Orange
1/2 to 1 Orange, peeled, seeded, chopped
Zest/grated rind of 1 Lemon
1/2 Lemon, seeded, chopped
1 Apple cored, peeled (optional), chopped
1/2 teaspoon ground cinnamon (optional)
1/2 to 3/4 cup chopped Pecans or Black Walnuts
1/2 to 3/4 cup Granulated Sugar (to taste)
1/4 cup Orange juice

Prepare and reserve zest/grated rind of 1 orange and 1 lemon. Prepare
nuts. Core, peel (optional) and chop apple. Wash cranberries and pick
over them. Grind cranberries, orange, lemon and apple in food grinder.
Save any juices and add back to mixture. Mix in Cinnamon, Nuts, Sugar and
Orange juice thoroughly. Add more juice if needed. Refrigerate for at
least 12 hours before using. Keep in refrigerator.
