DAVID'S DELIGHTFUL CAKE MIX SANDWICH COOKIES




CHOCOLATE CHIP CREAM CHEESE COOKIES
1/4 cup margarine
1 (8 oz.) pkg. cream cheese
1 egg
1/4 tsp. vanilla
1 pkg. Duncan Hines Cake Mix (white)
1 (8 oz.) pkg. chocolate chips
1/4 cup ground nuts

Cream margarine and cheese until light and fluffy. Beat in egg and vanilla
and
half the cake mix until smooth. Stir in remaining cake mix. Add chips and
nuts. Bake at 375 degrees for 10 to 12 minutes.



CREAM CHEESE COOKIES

1/4 cup butter or margarine
1 (8 oz.) pkg. cream cheese
1 egg yolk plus 1 tablespoon water
(can use one whole egg)
1/2 tsp. vanilla extract
1 box yellow cake mix, your favorite

Cream butter, cream cheese, egg yolk and vanilla extract. Stir in cake mix
1/3 at a time. Cover and chill 30 minutes in the refrigerator. Drop by
teaspoonful onto cookie sheet which has been sprayed with Pam. Bake at 375
degrees for 8 to 10 minutes or until nicely golden brown. Remove from
cookie sheet to wire rack to cool.

--CAKE MIX SUBSTITUTES--

Spice cake
Chocolate cake, omit vanilla extract
Cherry cake mix
Lemon cake mix, omit vanilla extract

--ADDITIONS--

Add chopped nuts
Add chopped dates
Flaked coconut

Yields 3 dozen.



CAKE MIX COOKIES

1 pkg. of any cake mix
1/2 cup cooking oil
2 Tbsp. water
2 eggs
1 cup (16 oz.) chips
1/2 cup nuts

Preheat oven to 350 degrees, blend everything. Bake for 10 to 12 minutes.
Cool on cookie sheet for 1 minute. Then remove.



BETTY CROCKERS CAKE MIX PEANUT BUTTER CHOCOLATE CHIP COOKIES

2 eggs
1/3 cup water
1/4 cup butter or margarine, softened
1 cup peanut butter
1 pkg. Betty Crocker lemon cake mix
1 (12 oz.) pkg. chocolate chips

Heat oven to 375 degrees. Beat eggs, water, butter and peanut butter with
electric beaters and half the cake mix until light and fluffy. Stir in
remaining cake mix and chocolate chips. Drop by rounded teaspoonfuls about
2 inches apart on ungreased baking sheet. Bake 10 to 12 minutes. Makes 6
dozen. For Peanut Butter Chocolate Chip Bars: Spread dough in greased and
floured jelly roll pan, 15 1/2 x 10 1/2 x 1 inches. Bake about 25 minutes.
Cool; cut in bars. Makes 30 bars (3x1 1/2 inches).



DAVID'S DELIGHTFUL CAKE MIX SANDWICH COOKIES

1 cake mix
2/3 cup shortening
2 eggs
2 Tbsp. water, if needed
Frosting

Mix together. Roll into balls the size of quarters. Place on ungreased
cookie sheet. Bake at 350 degrees; let cool. Frost cookie and put one on
top to make a sandwich
